Dinner Party

Girls night in? Yes, PLEASE! Whether it’s a patio party or a casual tapas spread at my basement bar, I’m here for it. I love to cook and entertain, and have been doing just that for my best of girlfriends. We sipped gin cocktails, dinned on grilled shrimp salads and nibbled at charcuterie and fruit boards. Last but certainly not least, the night commenced with decadent red velvet brownies and chocolate chip cookies.

Major shout out to Kimberly Stevens the author of Savor. This cookbook is full of delicious dips and beautiful boards. (The Green Goddess Dip on page 177 was amazing!)

The BEST Chocolate Chip Cookie Recipe

I’m known to have some dough in my freezer, cookie dough that is. Years ago I was pinning away on Pinterest, and I stumbled upon the PERFECT CHOCOLATE CHIP COOKIE! Friends, please believe me when I tell you, they were not lying. These crowd pleasers are a staple at every party I attend or host…like my mom and her broccoli rice casserole. And can we discuss their size??? Mmmmmm HHHMMMMM!

I’m a big fond fan of mixing Toll House morsels with the chocolate chunks. Variety is the spice of my life, ya’ll!

Week Night Dinner Inspiration

A friend of mine could use a helping hand, and while we independent women NEVER ask for help, I’m making her family dinner this week. I’m not even kidding, I LOVE cooking for my friends! I seriously dream of starting a food truck business. #MealsOnWheels

Turn up the volume on roasted chicken by dredging it in a simple marinade over night. I tossed the split chicken breasts with ribs in a zip top bag and poured an herby garlic salad dressing to coat. Bake at 375 degrees F on a baking sheet lined with parchment paper for an hour. #Voila

Steak and Shrimp Dinner

So I’m making my girlfriend dinner and I couldn’t be more excited! I LOVE to cook, bake, EAT, and film the occasional #pretendcookingshow. The meal I’m making my gf has to taste fabulous and look gourmet! After all, presentation is EVERYTHING, Queen! Some staples in my meals on wheels repertoire are chocolate chip cookies, rosemary and currant scones (recipe from my FAVE cookbook Ovenly) , and HUGE brightly colored salads.

I can’t stress it enough, if you don’t have a cast iron skillet…RUN don’t walk! It’s a must have kitchen tool. I will not cook my steaks in anything else. The rest of this fancy feast includes roasted shrimp on skewers, roasted red potatoes with red onion and chives, and a sprinkling of curly parsley a top it all (I prefer it to flat parsley, but to each her own).
