Week Night All Star Vol. 3

When inspo is running thin and the dinner bell is T-Minus from ringing, you gotta pull yourself together and #MakeItWork #TimGunn

This week a frozen bag of stir fry veggies were front and center, while Kikkoman stir fry sauce took this week night dish to varsity status. My tip for pulling off a spontaneous meal: listen to your fridge. If you have fresh ingredients on hand, use them up. If you have leftover bits and bobs, transform them into something new. A colorfully dressed salad will give life to tired grilled chicken. And do NOT underestimate the power of a great dressing or sauce!

Dinner Party

Girls night in? Yes, PLEASE! Whether it’s a patio party or a casual tapas spread at my basement bar, I’m here for it. I love to cook and entertain, and have been doing just that for my best of girlfriends. We sipped gin cocktails, dinned on grilled shrimp salads and nibbled at charcuterie and fruit boards. Last but certainly not least, the night commenced with decadent red velvet brownies and chocolate chip cookies.

Major shout out to Kimberly Stevens the author of Savor. This cookbook is full of delicious dips and beautiful boards. (The Green Goddess Dip on page 177 was amazing!)

Week Night Dinner Inspiration

BOOM! Sometimes the stars align and the universe roots for you. This evening was one of those magical evenings. This parmesan encrusted chicken is a very hands on kind of meal. I thrive on dishes that require you to get a little dirty. You all know by now how I feel about roasted carrots…LOVE! I can and do eat them all the time. And how much cuter are they when sliced on the diagonal?! Check out the Barefoot Contessa for her recipe on the afore mentioned messy chicken. Dazzle your family with this simple and delicious week night dinner!

Steak and Shrimp Dinner

So I’m making my girlfriend dinner and I couldn’t be more excited! I LOVE to cook, bake, EAT, and film the occasional #pretendcookingshow. The meal I’m making my gf has to taste fabulous and look gourmet! After all, presentation is EVERYTHING, Queen! Some staples in my meals on wheels repertoire are chocolate chip cookies, rosemary and currant scones (recipe from my FAVE cookbook Ovenly) , and HUGE brightly colored salads.

I can’t stress it enough, if you don’t have a cast iron skillet…RUN don’t walk! It’s a must have kitchen tool. I will not cook my steaks in anything else. The rest of this fancy feast includes roasted shrimp on skewers, roasted red potatoes with red onion and chives, and a sprinkling of curly parsley a top it all (I prefer it to flat parsley, but to each her own).
