Week Night Dinner Inspiration

A friend of mine could use a helping hand, and while we independent women NEVER ask for help, I’m making her family dinner this week. I’m not even kidding, I LOVE cooking for my friends! I seriously dream of starting a food truck business. #MealsOnWheels

Turn up the volume on roasted chicken by dredging it in a simple marinade over night. I tossed the split chicken breasts with ribs in a zip top bag and poured an herby garlic salad dressing to coat. Bake at 375 degrees F on a baking sheet lined with parchment paper for an hour. #Voila

When I feel inspired to try a new recipe, I turn to my favorite cookbook authors; Ina, Giada, and Daphne, and commit to WOW factor! #ShowUp&ShowOut

These beef skewers by Daphne Oz did just that. Her cookbook is AH-MAZING! With her guiding light, I have successfully crushed many a brunch and family gathering. If you don’t have this gem, RUN DON’T WALK!

Steak and Shrimp Dinner

So I’m making my girlfriend dinner and I couldn’t be more excited! I LOVE to cook, bake, EAT, and film the occasional #pretendcookingshow. The meal I’m making my gf has to taste fabulous and look gourmet! After all, presentation is EVERYTHING, Queen! Some staples in my meals on wheels repertoire are chocolate chip cookies, rosemary and currant scones (recipe from my FAVE cookbook Ovenly) , and HUGE brightly colored salads.

I can’t stress it enough, if you don’t have a cast iron skillet…RUN don’t walk! It’s a must have kitchen tool. I will not cook my steaks in anything else. The rest of this fancy feast includes roasted shrimp on skewers, roasted red potatoes with red onion and chives, and a sprinkling of curly parsley a top it all (I prefer it to flat parsley, but to each her own).

As you know, I’m obsessed with stationery and all things GEEK, so naturally I have a personal embosser with gold stickers and cellophane bags in bulk! Tie up the bags with some adorable ribbon and your baked goods Showed Up & Showed OUT! #FAF

In my humble home cook opinion, salads are beyond easy to spice up. If you’ve got zero time to impress but a will to make it happen, (pause for a snap) that’s all you need, Queen! I know it’s just Tuesday night, and I know my little boys couldn’t care less how GORGEOUS this turned out, but I’ll tell you what; seeing the pleasantly surprised look on my husband’s face..worth it! #FancyAF
